Apple and Cream Cake

Directions

  1. Prepare the Cream: In a small saucepan, whisk together the egg, stevia (or sugar), vanilla sugar, cornstarch, and milk until smooth.
  2. Heat the mixture over medium heat, whisking constantly, until it boils and thickens into a smooth cream. Cover the surface with cling film to prevent a skin from forming and allow it to cool to room temperature.
  3. Prepare the Cake Batter: In a large bowl, beat the eggs with stevia (or sugar), a pinch of salt, and vanilla extract for 3–4 minutes using an electric mixer until frothy.
  4. Add the milk and oil, mixing until combined. Sift in the flour and baking powder, then gently fold them into the wet mixture.
  5. Incorporate the thinly sliced apples into the batter, ensuring they are evenly distributed.
  6. Assemble the Cake: Pour half of the batter into a 27×27 cm (10.5×10.5 inch) rectangular baking pan lined with parchment paper.
  7. Spoon a few tablespoons of the prepared cream over the batter, spreading it evenly. Cover with the remaining cake batter.
  8. Using a piping bag, pipe the pastry cream on top in a checkerboard pattern for an attractive finish.
  9. Bake in a preheated oven at 170°C / 340°F for 40–45 minutes, until the cake is golden and a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool slightly, then sprinkle with icing sugar before serving.
