- Prepare the Cream: In a small saucepan, whisk together the egg, stevia (or sugar), vanilla sugar, cornstarch, and milk until smooth.
- Heat the mixture over medium heat, whisking constantly, until it boils and thickens into a smooth cream. Cover the surface with cling film to prevent a skin from forming and allow it to cool to room temperature.
- Prepare the Cake Batter: In a large bowl, beat the eggs with stevia (or sugar), a pinch of salt, and vanilla extract for 3–4 minutes using an electric mixer until frothy.
- Add the milk and oil, mixing until combined. Sift in the flour and baking powder, then gently fold them into the wet mixture.
- Incorporate the thinly sliced apples into the batter, ensuring they are evenly distributed.
- Assemble the Cake: Pour half of the batter into a 27×27 cm (10.5×10.5 inch) rectangular baking pan lined with parchment paper.
- Spoon a few tablespoons of the prepared cream over the batter, spreading it evenly. Cover with the remaining cake batter.
- Using a piping bag, pipe the pastry cream on top in a checkerboard pattern for an attractive finish.
- Bake in a preheated oven at 170°C / 340°F for 40–45 minutes, until the cake is golden and a toothpick inserted in the center comes out clean.
- Allow the cake to cool slightly, then sprinkle with icing sugar before serving.
