Instructions
- Grease three mini loaf pans and set aside.
- In a medium mixing bowl, combine the flour, baking soda, and salt. Set aside.
- In a large bowl, mash the bananas until creamy. Add the sugar and mix well.
- Pour in the melted butter and mix to combine. Stir in the egg and vanilla extract until fully incorporated.
- Add half of the flour mixture to the banana mixture and stir until just combined. Then fold in the remaining flour mixture.
- Gently stir in the chopped pecans (or other add-ins).
- Preheat the air fryer to 330°F (165°C).
- Scoop the batter into the prepared mini loaf pans, filling each about halfway. (For larger pans, fill about ⅔ full.)
- Place the pans in the air fryer basket and bake at 330°F for 20–25 minutes. Insert a toothpick into the center to check doneness—it should come out clean.
- Remove the pans from the air fryer and let the banana bread cool completely before slicing and serving.
