Spinach Mushroom Orzo

A cozy, comforting dish that feels a little fancy but is super easy to make. This Spinach Mushroom Orzo is creamy (without being heavy), packed with savory mushrooms, tender orzo, and fresh spinach. Perfect as a vegetarian main or a flavorful side.

Ingredients

  • 1 cup orzo pasta
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 250 g (8–9 oz) mushrooms, sliced (button, cremini, or a mix)
  • 2 cups fresh spinach, roughly chopped
  • 2½ cups vegetable broth (or chicken broth)
  • ¼ cup grated Parmesan (optional, for extra creaminess)
  • Salt and black pepper, to taste
  • ½ tsp dried thyme or Italian seasoning
  • A squeeze of lemon juice (optional, but lovely)
