• 3 carrots, sliced (300 g / 10 oz)
• 450 g mushrooms, halved (16 oz / about 4 cups)
• 3 cloves garlic, minced
For the Sauce
• 2 tablespoons all-purpose flour (15 g)
• 2 tablespoons tomato paste (30 g)
• 500 ml beef broth (2 cups)
• 375 ml dry red wine (1½ cups)
• 2 bay leaves
• 1 teaspoon dried thyme (5 g)
• 1 tablespoon fresh parsley, chopped (for garnish)
• Salt and black pepper, to taste
