Zucchini Gratin with Yellow Squash

Directions

  1. Preheat oven to 450°F (230°C).
  2. In an oven-proof skillet over medium heat, melt the butter. Add the onion and cook about 5 minutes, until edges begin to brown.
  3. Add garlic and cook for an additional 1 minute until fragrant.
  4. Stir in heavy cream and bring to a simmer, allowing it to bubble and slightly thicken.
  5. Slowly add Parmesan cheese, stirring until incorporated.
  6. Add zucchini and yellow squash to the skillet and cook 4–5 minutes, just until slightly tender.
  7. Sprinkle shredded smoked Gouda over the top.
  8. Transfer the skillet to the preheated oven and bake 15–20 minutes, until cheese is golden brown and bubbly.
  9. Serve immediately and enjoy!
