Directions
- Preheat oven to 450°F (230°C).
- In an oven-proof skillet over medium heat, melt the butter. Add the onion and cook about 5 minutes, until edges begin to brown.
- Add garlic and cook for an additional 1 minute until fragrant.
- Stir in heavy cream and bring to a simmer, allowing it to bubble and slightly thicken.
- Slowly add Parmesan cheese, stirring until incorporated.
- Add zucchini and yellow squash to the skillet and cook 4–5 minutes, just until slightly tender.
- Sprinkle shredded smoked Gouda over the top.
- Transfer the skillet to the preheated oven and bake 15–20 minutes, until cheese is golden brown and bubbly.
- Serve immediately and enjoy!
