Winter apple pie

Instructions

  1. Prepare the Pie Dough
    In a large bowl, mix flour, salt, and sugar. Add the cold butter and cut it into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Add Ice Water
    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Apple Filling
    In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract. Mix until the apples are evenly coated.
  4. Roll the Bottom Crust
    Preheat the oven to 375°F (190°C). Roll out one disc of dough and place it into a 9-inch pie dish.
  5. Add the Filling
    Pour the apple mixture into the pie crust and spread evenly. Dot the top with small pieces of butter.
  6. Add the Top Crust
    Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut a few small slits on top to allow steam to escape.
  7. Apply Egg Wash
    Whisk together the egg and milk, then brush it over the top crust for a golden finish.
  8. Bake the Pie
    Bake for 45–55 minutes, or until the crust is golden brown and the filling is bubbling.
  9. Cool Before Serving
    Allow the pie to cool for at least 1 hour so the filling can set properly.
