- Prepare the Pie Dough
In a large bowl, mix flour, salt, and sugar. Add the cold butter and cut it into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs. - Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes. - Prepare the Apple Filling
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract. Mix until the apples are evenly coated. - Roll the Bottom Crust
Preheat the oven to 375°F (190°C). Roll out one disc of dough and place it into a 9-inch pie dish. - Add the Filling
Pour the apple mixture into the pie crust and spread evenly. Dot the top with small pieces of butter. - Add the Top Crust
Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut a few small slits on top to allow steam to escape. - Apply Egg Wash
Whisk together the egg and milk, then brush it over the top crust for a golden finish. - Bake the Pie
Bake for 45–55 minutes, or until the crust is golden brown and the filling is bubbling. - Cool Before Serving
Allow the pie to cool for at least 1 hour so the filling can set properly.
