Directions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Make Taco Seasoning: In a small bowl, combine all ingredients for the taco seasoning. Set aside.
- Cook the Beef: In a large oven-safe skillet over medium heat, cook ground beef and diced onion until beef is browned, about 10 minutes. Drain any excess fat.
- Add Seasoning & RO-TEL: Stir in the taco seasoning mix, water, and undrained RO-TEL. Sprinkle the grated cheddar cheese evenly over the top.
- Bake: Place the skillet in the oven and bake for 10 minutes, or until the cheese is melted and bubbly.
- Prepare Toppings: While the casserole bakes, prepare the lettuce, tomatoes, green onions, jalapeno, cilantro, sour cream, and salsa.
- Assemble the Casserole: Remove the skillet from the oven. Layer corn chips on top of the melted cheese, then garnish with prepared toppings as desired. Serve immediately.
