Vanilla Sheet Cake with Chocolate Filling

Steps

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy (3–4 minutes).
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

Step 2: Bake the Cake

  1. Pour the batter into the prepared pan and spread evenly.
  2. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 3: Prepare the Chocolate Filling

  1. In a small saucepan, heat the heavy cream and butter over medium heat until melted and simmering.
  2. Remove from heat, add chocolate chips, let sit 1 minute, then stir until smooth.

Step 4: Assemble the Cake

  1. Slice the cooled cake horizontally into two layers using a serrated knife.
  2. Spread the chocolate filling evenly over the bottom layer.
  3. Place the top layer on the filling, gently pressing down.
  4. Optional: Frost the sides with buttercream or whipped cream.
  5. Slice and serve.

Variations

Raspberry Filling: Use raspberry jam or fresh raspberries instead of chocolate.
Nutty Delight: Add chopped walnuts or almonds to the chocolate filling.
Mocha Twist: Mix 1 tablespoon instant coffee into the chocolate filling for a coffee flavor.
