Ingredients
For the sponge cake:
- 7 eggs, at room temperature
- 2 cups (400 g) sugar
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 3 cups (360 g) wheat flour
- 1 tablespoon baking powder
- 350 ml (1½ cups) milk, at room temperature
- 50 ml (3½ tablespoons) sunflower or canola oil
For the truffle nest filling:
- 1 can (395 g) frozen condensed milk
- 1 can (approx. 500 ml) ice cream
- 8 tablespoons powdered milk
- 1 tablespoon unflavored gelatin
- 200 g (7 oz) melted white chocolate
- 1 cup whipped Chantilly cream
For dulce de leche mousse (optional stuffed layer):
- 3 egg whites
- 1 can (395 g) heavy cream without whey
- 1 can (395 g) cooked condensed milk
- 3 tablespoons sugar
For decoration:
- Milk brigadeiros (to form the nest)
