Introduction

This Truffle Nest Cake is a show-stopping dessert that combines light, fluffy sponge cake with a creamy, indulgent filling and a nest of chocolate truffles on top. Ingredients

For the sponge cake:

  • 7 eggs, at room temperature
  • 2 cups (400 g) sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups (360 g) wheat flour
  • 1 tablespoon baking powder
  • 350 ml (1½ cups) milk, at room temperature
  • 50 ml (3½ tablespoons) sunflower or canola oil

For the truffle nest filling:

  • 1 can (395 g) frozen condensed milk
  • 1 can (approx. 500 ml) ice cream
  • 8 tablespoons powdered milk
  • 1 tablespoon unflavored gelatin
  • 200 g (7 oz) melted white chocolate
  • 1 cup whipped Chantilly cream

For dulce de leche mousse (optional stuffed layer):

  • 3 egg whites
  • 1 can (395 g) heavy cream without whey
  • 1 can (395 g) cooked condensed milk
  • 3 tablespoons sugar

For decoration:

  • Milk brigadeiros (to form the nest)
