Tomato Oven Chicken

Directions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
  2. Prepare the Tomatoes:
    In a mixing bowl, combine cherry tomatoes, olive oil, minced garlic, oregano, thyme, rosemary, salt, and black pepper. Toss until the tomatoes are evenly coated.
  3. Assemble the Dish:
    Place the chicken thighs in an oven-safe baking dish or cast-iron skillet, skin-side up. Pour the seasoned cherry tomato mixture over and around the chicken.
  4. Roast the Chicken:
    Roast in the preheated oven for 30–35 minutes, or until the chicken is cooked through and the tomatoes have burst, releasing their juices.
  5. Optional Crispy Skin:
    For extra crispy skin, broil the chicken for 1–2 minutes at the end of cooking.
  6. Serve:
    Remove from the oven and let rest for a few minutes. Garnish with fresh basil leaves. Serve the chicken with the roasted cherry tomatoes and their flavorful juices.
