- 3 large eggs, separated

- 500 ml / 2 cups milk
- 40 g / 3 tbsp flour
- 40 g / 3 tbsp butter
- Pinch of salt
- Pinch of nutmeg
- Pinch of black pepper
For the Filling:
- 30 g / 2 tbsp butter
- 400 g / 14 oz button mushrooms, diced
- 150 g / 5 oz cooked ham, roughly chopped
- 100 g / 3.5 oz grated Swiss Gruyere cheese
- Salt and pepper, to taste
