Stuffed Donuts

Instructions

  1. Prepare the Dough:
    • Heat milk until lukewarm. In a large bowl, mix milk with yeast, vegetable oil, and icing sugar.
    • Add flour and salt, stirring until a soft, slightly sticky dough forms.
  2. Knead and Rise:
    • Knead the dough for 10 minutes using a stand mixer with a dough hook or by hand until smooth and elastic.
    • Place in a greased bowl, cover with a damp cloth, and let rise for 30–60 minutes until doubled in size.
  3. Shape the Donuts:
    • Turn the dough onto a lightly floured surface.
    • Roll or stretch the dough and cut into circles using a cookie cutter or glass.
  4. Fry the Donuts:
    • Heat oil in a deep skillet to 350°F (175°C).
    • Fry donuts 1–2 minutes per side until golden brown. Drain on paper towels.
  5. Make the Custard Filling:
    • In a medium bowl, beat egg and egg yolks. Add cornstarch and sugar, mixing until smooth.
    • Gradually add warm milk, stirring until incorporated.
    • Transfer to a saucepan over medium heat, stirring constantly until thickened.
    • Remove from heat and mix in margarine and vanilla extract. Let cool slightly.
  6. Fill the Donuts:
    • Spoon custard into a piping bag with a thin nozzle.
    • Poke a small hole in each donut and pipe the custard inside.
  7. Finish:
    • Dust donuts with powdered sugar and serve warm.

Tips & Variations

  • For extra flavor, add a splash of rum, orange zest, or cocoa powder to the custard.
  • Swap margarine for butter for a richer filling.
  • For a quicker option, bake the donuts at 375°F (190°C) for 12–15 minutes instead of frying.
