- Prepare the Dough:
- Heat milk until lukewarm. In a large bowl, mix milk with yeast, vegetable oil, and icing sugar.
- Add flour and salt, stirring until a soft, slightly sticky dough forms.
- Knead and Rise:
- Knead the dough for 10 minutes using a stand mixer with a dough hook or by hand until smooth and elastic.
- Place in a greased bowl, cover with a damp cloth, and let rise for 30–60 minutes until doubled in size.
- Shape the Donuts:
- Turn the dough onto a lightly floured surface.
- Roll or stretch the dough and cut into circles using a cookie cutter or glass.
- Fry the Donuts:
- Heat oil in a deep skillet to 350°F (175°C).
- Fry donuts 1–2 minutes per side until golden brown. Drain on paper towels.
- Make the Custard Filling:
- In a medium bowl, beat egg and egg yolks. Add cornstarch and sugar, mixing until smooth.
- Gradually add warm milk, stirring until incorporated.
- Transfer to a saucepan over medium heat, stirring constantly until thickened.
- Remove from heat and mix in margarine and vanilla extract. Let cool slightly.
- Fill the Donuts:
- Spoon custard into a piping bag with a thin nozzle.
- Poke a small hole in each donut and pipe the custard inside.
- Finish:
- Dust donuts with powdered sugar and serve warm.
Tips & Variations
- For extra flavor, add a splash of rum, orange zest, or cocoa powder to the custard.
- Swap margarine for butter for a richer filling.
- For a quicker option, bake the donuts at 375°F (190°C) for 12–15 minutes instead of frying.
