Spicy Ramen

Instructions

  1. In a non-stick skillet over medium heat, add sesame oil and heat until shimmering.
  2. Add the sliced red onion and cherry tomatoes. Cook for 1 minute until slightly softened.
  3. Stir in chili sauce and cook for 2–3 minutes until onions become translucent.
  4. Transfer the mixture to a blender. Add vegetable broth, soy sauce, rice vinegar, and brown sugar. Blend until smooth.
  5. Pour the blended broth into a saucepan and bring to a boil.
  6. Once simmering, add the ramen noodles and cook until al dente, about 3–4 minutes.
  7. Serve hot, topped with sesame seeds, sliced green onions, and soft-boiled eggs if desired.
