Southwest Chicken Salad

Directions

  1. In a large bowl, combine diced chicken, black beans, corn, red pepper, cilantro, and green onions. Stir well to mix.
  2. In a small bowl, whisk together lime juice, lemon juice, olive oil, Greek yogurt, honey, cumin, oregano, and salt to make the creamy dressing.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Season with additional salt and pepper to taste.
  5. Cover tightly and refrigerate for at least 20 minutes to allow flavors to meld.
  6. Serve chilled, as a salad, in a wrap, or alongside your favorite grains.
