Slow Cooker Witches Brew Stew

Directions

  1. In a skillet over medium heat, brown the Italian sausage and lean ground beef until fully cooked.
  2. Drain any excess fat and transfer the meat to the slow cooker.
  3. Add the chopped onion and one packet of onion soup mix to the slow cooker.
  4. Add the sliced button mushrooms on top of the meat mixture.
  5. Layer the sliced carrots and chopped celery over the meat and mushrooms.
  6. Place the halved baby potatoes on top of the vegetable mixture.
  7. In a separate bowl, combine the remaining packet of onion soup mix with beef broth, then pour this mixture over the contents of the slow cooker.
  8. Add the petite diced tomatoes with their juices and a splash of red wine vinegar, gently stirring to combine all ingredients.
  9. Set the slow cooker to LOW heat and cook for 4–6 hours, or on HIGH for 2–3 hours, until vegetables are tender and flavors have melded.
  10. Serve hot, garnished with freshly chopped herbs if desired, alongside crusty bread or warm dinner rolls.
