Slow Cooker Italian Drunken Noodle

Directions

  1. Prepare the Slow Cooker: Spray the slow cooker with non-stick spray or lightly oil it to prevent sticking.
  2. Cook the Sausage: In a skillet over medium heat, cook Italian sausage until browned. Transfer to the slow cooker.
  3. Add Aromatics & Sauce: Add diced onion and minced garlic to the slow cooker. Stir in crushed tomatoes, chicken broth, and white wine.
  4. Season: Add dried oregano, basil, red pepper flakes, salt, and black pepper. Stir to combine.
  5. Slow Cook: Cover and cook on low for 4–5 hours, or high for 2–3 hours. If using cooked chicken, stir it in during the last 30 minutes.
  6. Cook the Noodles: About 30 minutes before serving, stir in the noodles, making sure they are submerged in the sauce. Cover and cook until noodles are tender.
  7. Finish & Serve: Stir in Parmesan cheese until melted and creamy. Garnish with fresh parsley or basil. Serve hot with extra cheese if desired.

Wine Substitute: If you prefer a non-alcoholic version, use additional chicken broth with a splash of white grape juice.
