- Prepare the Meatballs: In a large bowl, combine ground meat, breadcrumbs, eggs, Parmesan, garlic, salt, pepper, and parsley (if using). Mix until everything is evenly incorporated.
- Shape and Brown: Roll the mixture into meatballs of your preferred size and place them on a baking sheet. Bake in a preheated oven at 200°C (400°F) for about 8 minutes, just until they are lightly browned on the outside.
- Make the Honey Buffalo Sauce: In a medium bowl, whisk together honey, hot sauce, apple cider vinegar, melted butter, garlic powder, and onion powder until smooth.
- Layer in the Slow Cooker: Place a portion of the meatballs in the bottom of the slow cooker. Drizzle some of the honey buffalo sauce over them. Add the remaining meatballs and pour the rest of the sauce over the top.
- Slow Cook: Cover and cook on low for 2 hours. About halfway through cooking, stir gently and taste. Adjust heat by adding an extra tablespoon or so of hot sauce if you prefer more spice.
- Serve: Once cooked, serve immediately as a main course with rice or mashed potatoes, or as an appetizer with toothpicks for easy picking.
