Slow Cooker Glazed Carrots

Directions

  1. Peel the carrots and cut them into evenly sized chunks so they cook at the same rate. If using baby carrots, no cutting is needed.
  2. Place the carrots directly into the bowl of your slow cooker, spreading them out evenly.
  3. In a small bowl, mix together the maple syrup, brown sugar, salt, and ground cinnamon until well combined.
  4. Pour the sweet glaze mixture evenly over the carrots.
  5. Gently stir to coat all the carrots, making sure every piece gets a glossy layer of the mixture.
  6. Scatter the butter slices evenly over the top of the carrots.
  7. Cover the slow cooker with the lid and cook on LOW for 5 to 6 hours, or on HIGH for about 3 hours, until the carrots are fork-tender.
  8. Stir once or twice during cooking if possible, allowing the glaze to evenly thicken and coat the carrots.
  9. For a thicker, more syrupy glaze, switch the slow cooker to HIGH for the last 30 minutes with the lid slightly ajar.
  10. Taste and adjust seasoning if needed, then serve hot, spooning extra glaze over the carrots before serving.
