Directions
Step 1: Prepare the Chicken
In a large bowl, whisk together the flour, black pepper, and salt. Add the chicken pieces and toss until evenly coated. For easier cleanup, you can do this step in a zip-top bag.
Step 2: Make the Sauce
In a separate bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, minced garlic, grated ginger, and red pepper flakes.
Step 3: Combine Chicken and Sauce
Pour the sauce over the coated chicken and stir until all pieces are thoroughly coated.
Step 4: Add to Slow Cooker
Transfer the chicken and sauce mixture to a slow cooker. Sprinkle the cashews evenly over the top.
Step 5: Cook
Cover and cook on low for 4–5 hours, or on high for 2–3 hours, until the chicken is tender and fully cooked.
Step 6: Serve
Serve the cashew chicken over freshly cooked rice, and garnish with additional cashews if desired. Enjoy a meal that’s flavorful, comforting, and satisfying.
