Sliced Steak with Roasted Potatoes & Creamed Greens

Instructions:

Toss potatoes with olive oil, salt, pepper, and roast at 200°C (400°F) for 25-30 mins.

Season steak with salt and pepper, sear in a hot pan with butter and garlic for 2-3 mins per side (or to preferred doneness), then rest.

For creamed greens: sauté greens in the same pan, add cream and mustard, and cook until tender.

Slice steak and serve with roasted potatoes and creamed greens, drizzled with pan juices and herbs.
