Simple Beef Mechado

Directions

  1. In a bowl, combine the beef chunks, soy sauce, lemon juice, and ground black pepper. Mix well and marinate for 1 hour.
  2. Heat oil in a pan over medium heat. Sauté garlic and onion until fragrant and lightly golden.
  3. Add the marinated beef to the pan and sauté for 1–2 minutes to sear slightly.
  4. Add bay leaves and the leftover marinade, stir to combine, then cover and cook for 20 minutes, stirring occasionally.
  5. Pour in the tomato sauce, stir well, and add 2 cups of water, the beef broth cube, and Thai chili. Cover and cook for 40 minutes to 1 hour, or until the beef is tender. Add more water if necessary.
  6. Add the sliced carrots and cubed potatoes. Cook until vegetables are tender.
  7. Finally, add the green bell pepper and cook for a few more minutes until the sauce thickens slightly. Adjust seasoning to taste.
  8. Serve hot with steamed rice for a comforting and flavorful meal.
