Directions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Form a well in the center of the dry ingredients and add milk, melted butter, vanilla extract, and egg.
- Whisk until the batter is smooth and mostly lump-free. Let the batter rest for 10 minutes to activate the baking powder and hydrate the flour.
- Heat a non-stick pan over low-medium heat and lightly grease with cooking spray or butter.
- Pour 1/4 cup of batter per pancake into the pan, smoothing it slightly into a round. Cook until bubbles form on the surface and the bottom is golden brown.
- Flip gently and cook the other side until golden brown.
- Repeat with the remaining batter. Serve warm with your favorite toppings.
