Directions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Form a well in the center of the dry ingredients and add milk, melted butter, vanilla extract, and egg.
  3. Whisk until the batter is smooth and mostly lump-free. Let the batter rest for 10 minutes to activate the baking powder and hydrate the flour.
  4. Heat a non-stick pan over low-medium heat and lightly grease with cooking spray or butter.
  5. Pour 1/4 cup of batter per pancake into the pan, smoothing it slightly into a round. Cook until bubbles form on the surface and the bottom is golden brown.
  6. Flip gently and cook the other side until golden brown.
  7. Repeat with the remaining batter. Serve warm with your favorite toppings.
