Shrimp Fried Rice Dish

Ingredients
01 2 tablespoons vegetable oil
02 1 pound shrimp, peeled and deveined
03 2 cups cooked and cooled rice, preferably day-old
04 2 eggs, beaten
05 1/2 cup frozen peas
06 1/2 cup diced carrots
07 1/2 onion, chopped
08 2 cloves garlic, minced
09 3 tablespoons soy sauce
10 1 teaspoon sesame oil
11 1/2 teaspoon black pepper
12 2 green onions, sliced, for garnish
Instructions
Step 01
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
Step 02
Add another tablespoon of oil to the pan. Pour in beaten eggs and scramble until fully cooked. Remove and set aside with shrimp.
Step 03
In the same pan, sauté onions, carrots, and peas for 3-4 minutes until softened. Add garlic and cook for another 30 seconds.
Step 04
Add rice and stir-fry for 2 minutes, breaking up any clumps.
Step 05
Return shrimp and eggs to the pan. Stir in soy sauce, sesame oil, and black pepper. Mix well.
Step 06
Cook for another 2 minutes, stirring frequently. Garnish with green onions and serve hot.
