Seafood Loaded Potato Pan

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a medium baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the sliced potatoes and chopped onion, stirring occasionally until the potatoes are just starting to soften and turn lightly golden, about 8–10 minutes.
  3. Add the minced garlic to the skillet and cook for about 30 seconds, just until fragrant.
  4. Add the shrimp and scallops to the pan and sauté gently until they turn opaque and tender, about 3–4 minutes. Be careful not to overcook.
  5. Gently fold in the crab meat, keeping the pieces as intact as possible.
  6. Pour in the heavy cream, then sprinkle in the cheddar cheese, Parmesan cheese, paprika, salt, and black pepper. Stir until the cheese begins to melt and the sauce looks smooth and creamy.
  7. Transfer the entire mixture into the prepared baking dish, spreading it evenly so the potatoes and seafood are well distributed.
  8. Place the dish in the oven and bake for 15–20 minutes, until the top is bubbly and lightly golden.
  9. Remove from the oven and let it rest for a few minutes. Sprinkle with fresh parsley before serving.
