Savory One-Pan Stuffed Pepper Casserole

Directions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Cook the Ground Beef: In a large oven-safe skillet over medium-high heat, heat the olive oil. Add the ground beef and cook, breaking it up with a spatula, until no longer pink. Drain any excess fat.
  3. Add Vegetables: Stir in the diced onion and bell peppers. Sauté for 2–3 minutes until they start to soften.
  4. Season: Add garlic, Italian seasoning, Worcestershire sauce, salt, and black pepper. Cook for 30 seconds until fragrant.
  5. Combine with Tomatoes: Pour in the diced tomatoes and stir to combine evenly.
  6. Add Rice and Broth: Stir in the rice and beef broth. Bring the mixture to a boil, then cover the skillet with a lid or foil.
  7. Bake: Transfer the covered skillet to the oven. Bake for 20–25 minutes, or until the rice is fully cooked. Add a little extra broth or water if the rice isn’t fully tender.
  8. Add Cheese: Remove the cover, sprinkle the shredded cheese over the top, and switch the oven to broil. Broil for 3–5 minutes, until the cheese is melted and bubbly.
  9. Garnish and Serve: Top with fresh parsley and serve hot.
