Ingredients:
- Salmon fillets
- Shrimp, peeled and deveined
- Fresh corn kernels
- Broccoli florets
- Olive oil
- Salt and pepper
- Lime juice
- Fresh cilantro
- Red onion, diced
- Jalapeño pepper, diced (optional)
Instructions:
- Preheat grill to medium-high heat.
- Season salmon fillets and shrimp with salt, pepper, and a drizzle of olive oil.
- Grill salmon and shrimp until cooked through, about 4-5 minutes per side for salmon and 2-3 minutes per side for shrimp.
- Meanwhile, in a bowl, mix together fresh corn kernels, diced red onion, diced jalapeño (if using), chopped cilantro, lime juice, salt, and pepper to make the salsa.
- Steam or blanch broccoli florets until tender-crisp.
- Serve grilled salmon and shrimp over a bed of steamed broccoli, topped with the fresh corn salsa.
