Salmon, shrimp, corn and broccoli

1. Grilled Salmon with Shrimp and Corn Salsa:

Ingredients:

  • Salmon fillets
  • Shrimp, peeled and deveined
  • Fresh corn kernels
  • Broccoli florets
  • Olive oil
  • Salt and pepper
  • Lime juice
  • Fresh cilantro
  • Red onion, diced
  • Jalapeño pepper, diced (optional)

Instructions:

  1. Preheat grill to medium-high heat.
  2. Season salmon fillets and shrimp with salt, pepper, and a drizzle of olive oil.
  3. Grill salmon and shrimp until cooked through, about 4-5 minutes per side for salmon and 2-3 minutes per side for shrimp.
  4. Meanwhile, in a bowl, mix together fresh corn kernels, diced red onion, diced jalapeño (if using), chopped cilantro, lime juice, salt, and pepper to make the salsa.
  5. Steam or blanch broccoli florets until tender-crisp.
  6. Serve grilled salmon and shrimp over a bed of steamed broccoli, topped with the fresh corn salsa.
