Directions
- Preheat your oven to 400°F (200°C).
- Toss the peeled onions with olive oil, salt, and pepper. Spread them evenly on a baking sheet.
- Roast the onions in the preheated oven for 20–25 minutes, until they are tender and lightly caramelized, turning once halfway through.
- While the onions roast, prepare the Parmesan cream sauce. In a small saucepan over medium heat, melt the butter. Add the heavy cream and whisk until smooth.
- Reduce the heat to low and stir in the Parmesan cheese. Continue whisking until the sauce is creamy and smooth. Add a pinch of nutmeg if desired.
- Remove the roasted onions from the oven and transfer them to a serving dish. Pour the Parmesan cream sauce over the onions and gently toss to coat.
- Garnish with chopped fresh parsley and serve immediately.
