Roasted Parmesan Creamed Onions

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the peeled onions with olive oil, salt, and pepper. Spread them evenly on a baking sheet.
  3. Roast the onions in the preheated oven for 20–25 minutes, until they are tender and lightly caramelized, turning once halfway through.
  4. While the onions roast, prepare the Parmesan cream sauce. In a small saucepan over medium heat, melt the butter. Add the heavy cream and whisk until smooth.
  5. Reduce the heat to low and stir in the Parmesan cheese. Continue whisking until the sauce is creamy and smooth. Add a pinch of nutmeg if desired.
  6. Remove the roasted onions from the oven and transfer them to a serving dish. Pour the Parmesan cream sauce over the onions and gently toss to coat.
  7. Garnish with chopped fresh parsley and serve immediately.
