In a small bowl, mix mayonnaise, Dijon mustard, and Worcestershire sauce until smooth. Set aside.
Step 7: Slice the Steak
Slice the rested ribeye thinly against the grain. This ensures tender bites and makes the sandwich easier to eat.
Step 8: Toast the Bread
Lightly toast the sandwich rolls in the oven or skillet until warm and slightly crisp.
Step 9: Assemble the Sandwich
Spread sauce on the bottom half of each roll. Layer sliced ribeye, caramelized onions, and cheese. Add any optional toppings you like.
Step 10: Melt and Serve
Place assembled sandwiches under the broiler for 1–2 minutes until the cheese melts. Top with the other half of the roll and serve immediately.
