Directions
Prepare the Meatballs:
- In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, basil, salt, and pepper. Mix until just combined.
- Shape the mixture into small, evenly sized meatballs, about 1 inch in diameter.
- Heat a large skillet over medium heat and add a little olive oil. Brown the meatballs on all sides, about 6–8 minutes, then remove from the pan and set aside.
Cook the Potatoes:
4. Preheat the oven to 375°F (190°C).
5. In a large bowl, toss the cubed potatoes with olive oil, salt, pepper, and paprika. Spread them evenly on a baking sheet.
6. Roast the potatoes in the oven for 20–25 minutes, until tender and lightly golden, flipping halfway through.
Assemble the Dish:
7. In a baking dish, layer the roasted potatoes evenly on the bottom. Arrange the browned meatballs on top of the potatoes.
8. Sprinkle the cheddar and mozzarella cheeses evenly over the meatballs and potatoes.
Bake and Serve:
9. Return the baking dish to the oven and bake at 375°F (190°C) for 10–15 minutes, or until the cheese is melted and bubbly.
10. Remove from the oven and let it cool slightly. Garnish with chopped parsley, if desired. Serve warm.
