Potato Pancakes

Directions

  1. Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes.
  2. Remove the bacon and crumble it; set aside. Leave the bacon drippings in the skillet.
  3. In a bowl, mix the mashed potatoes, eggs, onion powder, salt, and black pepper until well combined.
  4. Stir in the crumbled bacon and shredded cheddar cheese.
  5. Form the mixture into 8 evenly sized patties.
  6. Heat the bacon drippings over medium heat. Pan-fry the patties until crisp and golden on each side, about 4 minutes per side.
  7. Serve warm and enjoy!
