Directions

  1. Boil the Potatoes: Peel the potatoes and place them in a pot of salted water. Boil until tender, about 15–20 minutes. Drain well.
  2. Mash the Potatoes: Using a potato masher or fork, mash the boiled potatoes until smooth.
  3. Season and Mix: Add salt, pepper, starch, and mayonnaise to the mashed potatoes. Mix thoroughly to form a homogeneous, slightly sticky dough.
  4. Form Patties: Take a portion of the potato mixture and flatten it in your palm. Place a small piece of mozzarella or curd cheese in the center, then fold the potato mixture over it, shaping it into a round or oval patty. Press edges gently to seal.
  5. Heat the Pan: Heat the oil in a nonstick skillet over medium heat.
  6. Cook the Potato Packages: Place the patties in the pan and cook for 3–5 minutes per side, or until golden brown and crispy. Ensure the cheese inside melts.
  7. Drain and Serve: Remove from the pan and place on a paper towel-lined plate to remove excess oil. Serve warm.
