Potato Fritters

Directions

  1. Grate the potatoes and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the grated potatoes with parsley, spring onions, salt, pepper, garlic powder, eggs, corn starch, paprika, and coriander. Mix thoroughly.
  3. Form small fritters with the mixture. Heat vegetable oil in a skillet over medium heat. Fry the fritters until golden brown and crispy on both sides. Drain on paper towels.
  4. To prepare the yogurt sauce, mix yogurt, lemon juice, lemon zest, parsley, cucumber, salt, pepper, garlic, spicy sauce, and olive oil in a small bowl until smooth.
  5. Serve the hot fritters with the yogurt sauce on the side or drizzled on top.
