Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together the orange juice, lime juice, olive oil, vinegar, achiote paste, garlic, oregano, cumin, black pepper, onion powder, and salt until well combined.
  2. Marinate the chicken: Add the chicken thighs to the bowl, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, up to 4 hours for maximum flavor.
  3. Preheat the oven: Set your oven to 400°F (200°C) and allow the chicken to come to room temperature while the oven heats.
  4. Prepare for baking: Lightly grease a large baking tray. Arrange the marinated chicken thighs on the tray, leaving space between each piece.
  5. Bake the chicken: Roast for 28–30 minutes, or until the chicken is golden and crispy on the outside and reaches an internal temperature of 165°F (74°C).
  6. Serve: Remove from the oven and let rest for 5 minutes before serving. Enjoy with rice, tortillas, or a fresh salad.
