Pioneer-Style Sausage Gravy and Biscuits

Instructions

  1. Preheat the Oven
    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the Biscuit Dough
    In a large bowl, whisk together flour, baking powder, and salt. Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingertips until it resembles coarse crumbs.
  3. Add the Milk
    Pour in the milk and gently mix until a soft dough forms. Do not overmix, as this helps keep the biscuits tender.
  4. Shape the Biscuits
    Turn the dough onto a lightly floured surface and pat it into a 1-inch (2.5 cm) thick rectangle. Cut out biscuits using a round cutter or glass and place them on the prepared baking sheet.
  5. Bake the Biscuits
    Bake for 12–15 minutes, or until the biscuits are golden brown on top. Remove from the oven and set aside.
  6. Cook the Sausage
    While the biscuits bake, place the sausage in a large skillet over medium heat. Cook for 5–7 minutes, breaking it apart with a spoon until browned.
  7. Add the Flour
    Sprinkle flour over the cooked sausage and stir well. Cook for 1–2 minutes to remove the raw flour taste.
  8. Make the Gravy
    Gradually pour in the milk while stirring continuously. The mixture will thicken as it cooks. Simmer for 5–7 minutes until the gravy becomes creamy and smooth.
  9. Season the Gravy
    Add salt, black pepper, and garlic powder if using. Stir well and taste to adjust seasoning.
  10. Assemble and Serve
    Split the warm biscuits in half and generously spoon the sausage gravy over the top. Serve immediately.
