Directions
Step 1: Preheat the Oven
Preheat your oven to 180°C (350°F). Grease a 23×33 cm (9×13-inch) baking dish and set it aside.
Step 2: Prepare the Pecan Filling
In a medium bowl, combine the brown sugar, granulated sugar, melted butter, vanilla extract, and boiling water. Stir until the sugars dissolve. Gently fold in the pecan halves and set aside.
Step 3: Make the Cobbler Batter
In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until smooth. The batter will be slightly thick but pourable.
Step 4: Assemble the Cobbler
Pour the batter evenly into the prepared baking dish. Do not stir. Carefully spoon the pecan mixture over the batter, spreading it evenly across the surface.
Step 5: Bake
Place the dish in the oven and bake for 40–45 minutes, until the top is golden brown and the filling underneath is bubbling and thickened.
Step 6: Rest Before Serving
Remove from the oven and let the cobbler rest for 10–15 minutes. As it cools slightly, the sauce will thicken into a luscious, caramel-like layer.
Step 7: Serve Warm
Scoop the cobbler into bowls, making sure to get both the gooey bottom and the soft topping in each serving.
