Ingredients
For the Soup Base
• 680 g ground beef (1.5 lb)
• 1 medium onion, diced (about 150 g / 5.3 oz)
• 2 garlic cloves, minced
• 30 ml olive oil (2 tablespoons)
For the Soup
• 1 packet taco seasoning (about 30 g / 1 oz)
• 800 g canned diced tomatoes with juice (28 oz / about 3½ cups)
• 400 g canned black beans, drained and rinsed (14 oz / 1½ cups)
• 400 g canned kidney beans, drained and rinsed (14 oz / 1½ cups)
• 300 g frozen or canned corn, drained (1½ cups / 10.5 oz)
• 750 ml beef broth (3 cups)
• 120 ml tomato sauce (½ cup)
• Salt and black pepper to taste
Optional Toppings
• Shredded cheddar or Mexican-blend cheese
• Sour cream or Greek yogurt
• Crushed tortilla chips
• Chopped green onions or cilantro
