Peach Cheesecake

Directions

  1. Preheat the oven: Set your oven to 175°C (350°F). Grease a 9-inch (23 cm) springform pan.
  2. Prepare the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press evenly into the bottom of the prepared pan. Bake for 8–10 minutes, then remove from the oven and let cool slightly.
  3. Make the cheesecake filling: In a large mixing bowl, beat cream cheese and sugar until smooth and creamy. Add vanilla extract and mix to combine. Beat in eggs one at a time, ensuring each is fully incorporated. Gently fold in sour cream until mixture is silky and uniform.
  4. Bake the cheesecake: Pour the filling over the cooled crust. Bake at 175°C (350°F) for 50–60 minutes, until the edges are set and the center slightly jiggles. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  5. Chill: Remove cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to allow it to fully set.
  6. Prepare the peach topping: In a medium saucepan, combine sliced peaches, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until the mixture thickens and the peaches are tender, about 5–7 minutes. Stir in vanilla extract. Let cool to room temperature.
  7. Assemble the cheesecake: Spoon the cooled peach topping over the chilled cheesecake, spreading evenly.
  8. Serve: Slice with a sharp knife, wiping it clean between cuts for neat slices. Serve chilled. Optionally, garnish with whipped cream or fresh mint for presentation.
