Directions
- Preheat your oven to 220°C (430°F) and prepare a cake mold by greasing it with butter.
- Place the mint leaves in a mixer and pulse until finely chopped. Add the flour, eggs, sugar, vanilla sugar, milk, baking powder, and butter. Mix until a smooth, homogenous batter forms.
- Peel 5 peaches and cut them into small cubes. Toss them lightly with a little flour to prevent them from sinking in the batter.
- Arrange half of the peach cubes at the bottom of the prepared cake mold. Pour the batter over the peaches and then gently add the remaining peach cubes, pressing them lightly into the batter.
- Peel the last peach, cut it into quarters, and use it to decorate the top of the cake.
- Bake in the preheated oven for about 35 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Allow the cake to cool slightly before serving.
