Oven Roasted Potatoes

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Prep the potatoes:
    Wash and dry the potatoes (peeling is optional).
    Cut into 1-inch cubes or wedges for even cooking.
  3. Season the potatoes:
    In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, paprika, and herbs (if using).
  4. Roast in the oven:
    Spread the potatoes in a single layer on a baking sheet (use parchment paper for easy cleanup).
    Roast for 20 minutes, then flip or stir for even browning.
    Roast another 20–25 minutes until golden and crispy.
  5. Garnish & serve:
    Sprinkle with fresh parsley and extra salt if needed.

Tips for Extra Crispiness:

  • Soak potatoes in cold water for 10 minutes before roasting (removes excess starch).
  • For extra crunch, broil for 1–2 minutes at the end (watch closely!).
