Mexican Tater Tot Casserole

Directions

  1. Preheat oven to 400°F (200°C). Grease a large casserole dish with cooking spray.
  2. Heat a large skillet over medium heat. Add ground beef, onion, and bell peppers. Cook until the beef is no longer pink and the vegetables are softened, about 7–8 minutes.
  3. Stir in the taco seasoning and cook for another minute until well combined.
  4. Spread the beef and pepper mixture evenly on the bottom of the prepared casserole dish.
  5. Pour the queso over the beef mixture and spread to cover completely.
  6. Arrange the tater tots evenly on top of the queso layer.
  7. Bake for 40 minutes. Remove from oven, sprinkle shredded cheddar cheese over the top, and bake an additional 5 minutes or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!
