Directions
- Preheat oven to 400°F (200°C). Grease a large casserole dish with cooking spray.
- Heat a large skillet over medium heat. Add ground beef, onion, and bell peppers. Cook until the beef is no longer pink and the vegetables are softened, about 7–8 minutes.
- Stir in the taco seasoning and cook for another minute until well combined.
- Spread the beef and pepper mixture evenly on the bottom of the prepared casserole dish.
- Pour the queso over the beef mixture and spread to cover completely.
- Arrange the tater tots evenly on top of the queso layer.
- Bake for 40 minutes. Remove from oven, sprinkle shredded cheddar cheese over the top, and bake an additional 5 minutes or until the cheese is melted and bubbly.
- Serve hot and enjoy!
