Meatloaf with Mashed Potatoes and Cheese

Directions

  1. Preheat your oven to 180°C (350°F). Lightly grease a large baking dish or line it with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix gently with your hands until just combined; overmixing can make the meatloaf dense.
  3. Shape the mixture into a loaf and place it in the prepared baking dish. Spread a thin layer of ketchup over the top for added moisture and flavor.
  4. Bake the meatloaf uncovered for 40 minutes. As it cooks, the kitchen will fill with a rich, savory aroma that signals comfort food at its best.
  5. While the meatloaf bakes, place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15–20 minutes, or until the potatoes are fork-tender.
  6. Drain the potatoes well and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt to taste.
  7. After 40 minutes, remove the meatloaf from the oven. Carefully spread the mashed potatoes evenly over the top, creating a fluffy layer.
  8. Sprinkle the shredded cheese generously over the mashed potatoes.
  9. Return the dish to the oven and bake for another 15–20 minutes, until the cheese is melted, bubbly, and lightly golden.
  10. Let the dish rest for 10 minutes before slicing. This helps everything set and makes serving easier.
