Directions
- Preheat oven to 375°F (190°C). Grease a loaf pan and set aside.
- In a large mixing bowl, combine all meatloaf ingredients. Mix well until fully incorporated.
- Transfer the mixture to the greased loaf pan and shape into a loaf.
- Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Meanwhile, prepare the mashed potatoes. Place potato chunks in a pot, cover with water, and bring to a boil. Cook until tender, about 15–20 minutes. Drain well.
- Melt butter over low heat in the same pot. Return potatoes to the pot and mash until smooth. Gradually add milk or cream, stirring until desired consistency is reached. Season with salt and pepper.
- For the gravy, melt butter in a small saucepan over medium heat. Whisk in flour and cook 1–2 minutes until lightly golden.
- Slowly whisk in beef broth and Worcestershire sauce. Simmer for 3–5 minutes until thickened. Season with salt and pepper to taste.
- Serve slices of meatloaf with mashed potatoes and pour the gravy over the top.
