Directions

  1. Mix Dry Ingredients: In a mixing bowl, combine flour, baking powder, salt, paprika, garlic powder, onion powder, and black pepper. Stir well to evenly distribute the spices.
  2. Add Water: Gradually pour in cold water while whisking. Continue whisking until the batter is smooth and free of lumps.
  3. Rest the Batter: Let the batter rest for 10–15 minutes. This allows the flour to fully hydrate and flavors to meld.
  4. Coat Seafood: Dip your seafood of choice (fish fillets, shrimp, etc.) into the batter, ensuring an even coating.
  5. Fry: Heat oil in a deep fryer or deep skillet to 350°F (175°C). Carefully place the battered seafood in the hot oil and fry until golden brown and crispy, usually a few minutes depending on thickness.
