Lazy Man’s Pie Peach Cobbler

Directions

  1. Prepare for baking: Preheat your oven to 175°C (350°F). Melt the stick of butter or margarine directly in a 23×33 cm (9×13 inch) baking pan.
  2. Make the batter: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Gradually stir in the milk until a smooth batter forms.
  3. Assemble the cobbler: Carefully pour the batter over the melted butter in the baking pan. Do not stir. Spoon the sweetened fruit evenly over the top of the batter. Avoid mixing the fruit into the batter—this allows the cobbler to naturally create its signature layers.
  4. Bake and serve: Place the pan in the preheated oven and bake for 1 hour, until the top is golden brown and the edges are bubbly. Remove from oven and let cool slightly. Serve warm, optionally with whipped cream or a scoop of vanilla ice cream.
