Introduction

Kulfi is often called the “Indian ice cream,” but it’s richer, creamier, and more indulgent than traditional ice cream. With its dense, velvety texture and delicate flavors of cardamom, saffron, and pistachios, this frozen treat is perfect for cooling off on a hot day or impressing guests at a dinner party. Unlike typical churned ice cream, kulfi is slow-cooked and frozen in molds, giving it its signature creamy consistency and intense flavor. Making it at home is easier than you might think!

Ingredients

  • 1 liter (4 cups) whole milk
  • 100 g (½ cup) sugar
  • 1 tsp ground cardamom or 4–5 green cardamom pods, crushed
  • A pinch of saffron strands (optional)
  • 50 g (¼ cup) chopped pistachios or almonds
  • 1 tsp rose water (optional)
  • Kulfi molds or small paper cups with popsicle sticks
