Step 1 – Preheat and Prepare
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or use a silicone baking mat to prevent sticking.
Step 2 – Mix Dry Ingredients
In a large bowl, combine:
- Almond flour
- Coconut flour
- Baking powder
- Salt
Mix thoroughly to ensure the baking powder is evenly distributed — this will help the rolls rise evenly.
Step 3 – Combine Wet Ingredients
In a separate bowl, whisk together:
- Eggs
- Melted butter or coconut oil
- Almond milk
- Apple cider vinegar
The vinegar helps the rolls become fluffy by reacting with the baking powder.
Step 4 – Form the Dough
Gradually mix the wet ingredients into the dry ingredients until a sticky dough forms. The dough will be softer than traditional wheat bread dough — that’s normal for keto bread.
Step 5 – Shape the Rolls
Using a spoon or your hands (dusted with a little almond flour), form the dough into 8–10 equal rolls and place them on the prepared baking sheet. Optionally, sprinkle sesame seeds or poppy seeds on top for extra flavor and texture.
Step 6 – Bake
Bake the rolls for 20–25 minutes or until golden brown and firm to the touch. A toothpick inserted in the center should come out clean.
Step 7 – Cool and Serve
Allow the rolls to cool for at least 10 minutes before slicing. This step is crucial — keto bread continues to firm up as it cools, and slicing too early can cause crumbling.
