Directions

  1. Prepare the tomatoes: Halve the tomatoes and scoop out the seeds and pulp. Dice the remaining flesh into small ½ cm pieces.
  2. Prepare the green onions: Slice the white portions thinly, stopping where the stalk turns dark green.
  3. Shred the lettuce: Use butter lettuce for a soft, tender texture. Other lettuces can be used if preferred.
  4. Mix the filling: In a medium bowl, combine mashed eggs, diced tomatoes, shredded lettuce, and sliced green onions. Add mayonnaise (or salad cream), salt, and pepper. Mix gently until evenly combined.
  5. Butter the bread: Spread a thin layer of butter on one side of each bread slice. This prevents sogginess and adds flavor.
  6. Assemble the sandwiches: Divide the filling evenly between two buttered slices of bread. Top with the remaining slices.
  7. Trim and cut: Remove crusts if desired. Cut each sandwich diagonally into four triangles.
  8. Serve: Arrange neatly on a plate and enjoy immediately. Perfect for tea, lunchboxes, or light gatherings.
