Freeze the pineapple: If using fresh pineapple, core, peel, and cut it into 1-inch chunks. Spread the pineapple chunks on a baking sheet in a single layer and freeze for at least 4 hours, or overnight.
Process the soft serve: Add the frozen pineapple chunks, sweetened condensed milk, and cold heavy whipping cream to a food processor. Pulse a few times to break up the pineapple, then process continuously until smooth and creamy, scraping down the sides as needed. This takes about 1-2 minutes.
