Homemade Enriched Bread (Soft & Fluffy)

Directions

  1. Activate the yeast: In a small bowl, combine 2 tablespoons of sugar with warm milk (about 1 cup) and sprinkle the yeast on top. Stir to dissolve and let sit for 5–10 minutes until foamy.
  2. Mix initial dough: In a large mixing bowl, make a “volcano” with the flour and pour the yeast mixture in the center. Add a few of the eggs and mix gently with some flour until the mixture is slightly liquid. Cover and let rise for 10–20 minutes in warm weather, or up to 1 hour in cooler conditions.
  3. Incorporate remaining ingredients: Add the butter, salt, sugar, and remaining eggs. Knead the dough thoroughly until it is smooth, elastic, and soft. If the dough feels dry, gradually add more butter or a splash of milk while kneading.
  4. Shape the bread: Divide the dough into balls or your desired shapes. You can top them with sugar, cheese, or stuff them with savory fillings like mini empanadas.
  5. Proof the dough: Allow the shaped dough to rise again until nearly doubled in size. Timing will depend on the temperature of your kitchen.
  6. Bake: Preheat the oven to 180°C (350°F). Bake the bread for 20–25 minutes, or until golden brown on top and cooked through.
  7. Cool and serve: Let the bread cool slightly on a wire rack before slicing. Enjoy it warm with butter, jam, or your favorite spread.
