Homemade Chocolate Cake

Directions

Step 1: Prepare the Oven and Pans

Preheat your oven to 175°C (350°F). Grease and lightly flour two 23 cm (9-inch) round cake pans, or line the bottoms with parchment paper for easy release.

Step 2: Mix the Dry Ingredients

In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. The mixture should look evenly dark and free of lumps.

Step 3: Add the Wet Ingredients

Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix gently until the batter is smooth and glossy, with no dry streaks remaining.

Step 4: Incorporate the Hot Liquid

Slowly pour in the hot water or coffee while mixing. The batter will be thin—this is exactly what gives the cake its moist, tender texture.

Step 5: Bake the Cakes

Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Step 6: Cool Completely

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Turn them out onto a wire rack and allow them to cool completely before frosting.

Step 7: Make the Frosting

In a large bowl, beat the softened butter until creamy. Add the cocoa powder and mix until smooth. Gradually beat in the powdered sugar, followed by the milk, vanilla extract, and salt. Beat until light, fluffy, and spreadable.

Step 8: Assemble the Cake

Place one cake layer on a serving plate. Spread an even layer of frosting on top, then place the second cake layer over it. Frost the top and sides of the cake as desired.

Step 9: Set and Serve

Let the cake rest for 20–30 minutes before slicing. This allows the frosting to set and makes for cleaner slices.

Add 1 teaspoon instant espresso powder or a pinch of cinnamon to deepen the chocolate flavor.
